They keep you feeling full, which studies show may help with weight loss. For creamy scrambled eggs without the added fat of cream, cream cheese or shredded cheese, try low-fat cottage cheese as your secret ingredient. Not only do you get that smooth, melt-in-your-mouth taste, but cottage cheese is high in protein and calcium, which is important for bone health.

To make this recipe you will need a bowl and a non-stick pan.

Ingredients

4 eggs 
2 Tbsp. milk 
Salt, to taste 
Pepper, to taste 
1/3 cup low-fat cottage cheese 

Directions

Beat the eggs with the milk, plus a pinch each of salt and pepper.

Cook as you would any scrambled eggs, in a non-stick pan, stirring over medium-low heat.

Just before the eggs are done, stir in the low-fat cottage cheese.

  •  Look for low-fat, low-sodium cottage cheese to get the most out of your low-calorie, high-protein breakfast. If you have trouble digesting dairy, there may also be lactose-free options available.  
  • To give your eggs a little something extra, consider adding fresh herbs. Parsley, chives and dill all make great pairings with eggs. They’re also all excellent sources of antioxidants that support immune health. Dill can also provide folate, which may be depleted in people who take medications like methotrexate to treat arthritis.  
  • Look for eggs that are pasture-raised or omega-3 enriched because they tend to be higher in omega-3 fatty acids, which can reduce your risk of heart disease.
