Overview
A food processer or blender make quick work of this healthy and delicious salad dressing without the added fat and calories from oil or added sugars.

Ingredients

3 dried prunes
3 dried figs, cut in quarters
¾ cup water
½ cup fresh blueberries
½ cup balsamic vinegar
1 tsp. Dijon mustard
1 tsp. garlic, minced
¼ tsp. black pepper

Directions

Step One
Place prunes, figs and water in a saucepan. Simmer until three tablespoons of water remain.
Step Two
In a food processer, place blueberries, prunes, figs, reduced liquid and remaining ingredients. Pulse until smooth.
Chef's Notes:
  • If fewer than 3 tablespoons of water remain after simmering, just add more water to equal 3 tablespoons.
