Ingredients
⅓ cup unsalted roasted almonds
¼ cup buttermilk
½ cup plain Greek yogurt
1 shallot, peeled
1 cup baby spinach
1 cup parsley
⅓ cup fresh mint
1 tsp. lemon zest
1 Tbsp. fresh lemon juice
¼ tsp. cayenne
¼ tsp. salt
1½ lbs. rainbow trout fillets

Directions
Step One
Place almonds in a food processor container and blend into small pieces. Add buttermilk, yogurt, shallot, parsley, mint, lemon zest, lemon juice, cayenne and salt to the container and blend until smooth. Chill for about 30 minutes before using.
Step Two
Season trout with salt and pepper and place skin side down on a parchment paper-lined baking sheet. Bake fish for 15 minutes, or until barely cooked through in the thickest part of the flesh.
Step Three
Top with almond sauce.
