Coconut-Mango Agua Fresca

Blend together electrolyte-rich coconut water, mango and a squeeze of lime for a refreshing, hydrating mocktail.

Overview
Agua fresca — Spanish for “fresh water” — is a drink traditionally made from just water, fruit and sugar, served as a refresher throughout Mexico, Central America and the Caribbean. Using almost any fruit, or even flowers, like hibiscus, it’s a great cocktail substitute on a hot afternoon, but it’s often very high in sugar. This version keeps the fruit but blends in naturally sweet coconut water instead of sugar and water, which means the end result still tastes sweet but is actually much lower in sugar, and has the added benefit of coconut water’s natural electrolytes. It gives the drink a natural creaminess, mimicking a coconut-based cocktail, but without the heaviness of full-fat coconut milk. For a fancy touch, top with lime zest.  

Ingredients

16 oz unsweetened coconut water
1 cup (about 5 oz) frozen mango chunks
1 Tbsp. lime juice, or to taste

Directions

Step One
In a blender, combine the coconut water, mango and lime juice, and whirl on high speed until completely blended. Divide between two 12-ounce glasses and serve immediately — over ice if preferred.  
Chef’s Notes: 
  • Coconut water with or without pulp works here. Note that coconut water should be almost transparent but can range in color from clear to pinkish. 
  • Although precut frozen mango saves work and pain for those with tender joints, fresh mango also works well. You can also substitute fresh or frozen strawberries for a more daiquiri-like flavor, or fresh or frozen pineapple to make it more like a piña colada. If you use fresh fruit, serve the drink over ice, as a cold agua fresca really is best! 
  • Some prefer strained agua fresca, which results in a more transparent, thinner drink. If you prefer, you can strain this through a fine-mesh strainer before serving, but note that it will only make about one and a half servings that way. 
  • To turn this into a tropical smoothie, add 1 cup Greek yogurt and 1 ripe banana before blending.
