Arugula Salad With Berries and Blue Cheese Vinaigrette

This delicious, healthy salad combines the flavors of sweet berries, peppery arugula and salty blue cheese.

The sweetness of berries complements peppery arugula in this no-fuss, healthful salad. Antioxidant-rich berries may help battle inflammation, and olive oil is rich in oleocanthal, a compound with strong anti-inflammatory properties. Ingredients

4 packed cups arugula

1 cup fresh blueberries          

1 cup fresh strawberries, sliced

3 Tbs. apple cider vinegar

1 tsp. Dijon mustard

Salt and freshly ground pepper, to taste

½ cup extra-virgin olive oil

2 Tbs. creamy-style blue cheese

Directions

Place arugula, blueberries and strawberries in a salad bowl.

In a blender, whirl together vinegar, mustard, salt, pepper, olive oil and blue cheese until well combined.

Drizzle salad with about ¼ cup of the vinaigrette; toss lightly to coat. Store additional dressing in the refrigerator for up to a week.
